Applesauce Muffins

The next recipe comes from a member of my gluten free support group who has a child with celiac. She brought these muffins to a meeting and everyone thought they were good...they're also quick and easy to make.

1 c gluten free flour (she uses Arrowhead Mills Gluten Free All Purpose Baking Mix--I found at Whole Foods)

1/2 c packed brown sugar

3/4 tsp baking soda

1 tsp cinnamon

1 c applesauce (I used unsweetened which I happened to have on hand)

1/4 c butter softened

1 egg beaten

1/2 c nuts (optional) (she didn't use and neither did I)

Heat oven to 350F

Mix dry ingrediants in large bowl. Add softened butter, mix together.

Add egg and applesauce. Pour into paper lined muffin tins 2/3 full.

Makes 10 muffins

Bake approximately 15 minutes until toothpick comes out clean (I had to bake 17 minutes)

Note: Like most gluten free baked goods, these look great in the oven, but after being removed from the oven they tend to sink a bit in the center....that's the normal look. Hope you enjoy, let me know if anyone tries these and has any luck.
