Flourless Peanut Butter Chocolate Chip Cookies
Baked some up this morning, and I think they're pretty dang tasty. I would never guess that they're gluten free.
1 C. firmly packed brown sugar
1 C. chunky peanut butter (I used Jif, which dot's book says is gluten free)
1 large egg
1 tsp. baking soda (mom-make sure you're not using that 10 year old stuff, because these need to be "puffy")
1/2 tsp. vanilla extract
1 C. milk chocolate morsels (I tried some of mine with semi-sweet morsels and those turned out fine also)
Stir together first 5 ingredients in a medium bowl, using a wooden spoon.
Stir in chocolate morsels.
Drop cookie dough by rounded tablespoons onto a parchment paper lined baking
sheet. (I just used a
nonstick cookie sheet)
Bake at 350 degrees for 12 minutes or until puffed and golden. (I only did 11 minutes)
Let cool on baking sheet for 5 minutes before removing.
